Batching Mix Master (Bakery) (Vernon)

  • The Batching / Mixing (Master) position is responsible for monitoring as well as blending the prescribed ingredients required to provide a consistent quality, following the formula(s) and procedures established by the company without deviation. Ensure that all products are produced safely, efficiently and meet all quality standards as set forth by the company. Prior experience in a bakery, food manufacturing, plant is required.

    Primary Responsibilities/Accountabilities:
    • Oversee a staff of 4 mixers: two mixing rooms
    • Complete and monitor successful daily set up process in mixing area
    • Delegate mixing responsibility to staff — dry/wet scalers
    • Ensure set-up and completion of the daily routine for mixing area and staff
    • Monitor and Accumulate all pre-approved ingredients: staging, handling and mixing of ingredients
    • Check waffle batter consistency and process parameters throughout the shift
    • Adjust mixing machines as necessary to control scale weights
    • Monitor batter deposit weights and make adjustments to Depositor to ensure baked weight compliance to standards
    • Monitor use of partial ingredients — ensuring oldest ingredients are used first
    • Advise QC of changes in batter consistency and texture
    • Monitor and communicate information regarding formulation changes, batter temperatures and floor times
    • Communicate to Management any problems, changes or inconsistencies regarding raw ingredients, spillage, errors occurring in the weighing/mixing and depositing processes
    • Monitor the performance of all employees working under his/her direction.
    • Provide manual ingredients when required
    • Must be hands on including but not limited to mixing batters when short staffed, coordinate and assist with planning of manpower for next day’s production run
    • Protect the safety of all raw materials and ingredients as needed to ensure no cross contamination occurs at every step in the manufacturing process
    • To set an example to others relating to the personal Safety procedures relating to the mix tank equipment including the operation of the on/off and reverse switches and to utilize all equipment in a safe and approved manner
    • Verify the sanitary and cleanliness condition of the working environment including all of the blending equipment, work tables, counters, utensils and small wares prior to start and end of each shift.
    • Ensure that Batch Setters are trained in Good Manufacturing Practices (GMPs) and work instructions
    • Review production schedule for confirmation.
    • Advise Plant Manager, Production Manager, Production Supervisor/Leads or Q.A. inspector of any quality or other problems which may affect the production, efficiency or consistency in product or performance.
    • Maintain an open channel of communication with the oven operator to ensure that the batter results in a high quality product.
    • Ensure that the Batch Setter follow prescribed “set time” of batches and mix times according to the Van’s Official Formulation Sheets.
    • All paperwork must be organized, complete, accurate, legible and initialed with all of the required details. Details includes but is not limited to: Mix Batch Sheets, Lot Coding, Bar Codes including the manufacturer of our ingredients
    • Maintain product flow to ovens without any interruptions.
    • Must understand and obtain thorough awareness of Van’s programs relating to:
    o allergen control
    o incoming inspection of raw materials
    o storage of raw materials
    o production scheduling
    • Must understand and obtain thorough awareness of the income return on produced product (Yields); mix ingredients to achieve highest yields
    • Must be able to communicate with R&D about formula changes
    • Must work closely with oven operators to achieve proper weights
    • Must be able to train other employees the proper way to mix
    • Must be able to input data into the SPC system and communicate data to other employees
    • Must be able to take accurate Bostwick measurements to insure proper consistency with each batch and input data into SPC system
    • Troubleshoot and immediately report product or machine failures
    • Complying with and having thorough knowledge of all Van’s product quality standards, policies and procedures.
    • Contributing and encouraging contribution to the Van’s TEAM effort.

    Qualifications/Abilities/ Education:
    • Minimum of 6 months -1 year of experience in a Food Manufacturing.
    • Bakery Experience — knowledge of working with dough and/or bakery batters preferred
    • Demonstrate proficiency and experience in operating all mixing equipment
    • Must be able to take direction well
    • High school diploma or general education degree (GED); or six months to one year related experience and/or training; or equivalent combination of education and experience.
    • Ability to add, subtract, multiply, and divide in all units of measure
    • Flexibility to work various hours and shifts

    Physical Demands:
     The employee must occasionally lift and/or move up to 10- 55 pounds
     The employee must be able to walk the production lines frequently

    Work Environment:
     The noise level in the work environment is moderate to high
     Ability to work carefully around food processing, baking and mixing machines including conveyor belts, fans, ovens and mixers
     Heat: Oven heat for periods of more than one hour
     Hazard: Includes a variety of physical conditions, such as proximity to moving mechanical parts, electrical current, exposure to high heat or exposure to chemicals.
