Server: You must have experience in fine dining.

*Shrimp & Polenta $19 Citrus marinated shrimp. Served w/ soft polenta & swiss chard w/ a saffron sauce. Try w/ the Simi Chard.
*Roasted Duck $21 Two juicy roasted breasts over a bed of shiitake risotto. Served w/ an organic strawberry sauce, & grilled beet greens. Try our Estancia or David Bruce pinot.
*Slow Cooked Pork $22 Tenderized in a garlic-orange marinade. Fork tender over grilled romaine, & crispy artichokes. Try w/ the Stag’s Leap syrah or the Estancia pinot.
*Skirt Steak $22 Cooked med-rare w/ hand made pasta tossed in a creamy horseradish sauce & grilled arugala. Tastes great w/ the Wolf Blass shiraz, Stag’s Leap syrah, or Twomey merlot.
*Short Ribs $22 Two racks braised until fork-tender in a sake-soy broth. Served w/ tender Yukon Gold fries & organic baby carrots. Mt Veeder or Caymus cabernets would be a great compliment.
*Monk fish $23 A. K. A. the poor-man’s lobster. Served over a Yukon gold potato cake w/ a saffron-fennel sauce. The Landmark or Newton chardonnay is a nice compliment.
*Petite Filet $24 A 6 oz. cut of USDA Prime tenderloin cooked med-rare. Served w/ a parsnip puree & sugar snap peas w/ a soy-espresso sauce. Excellent w/ the Stag’s Leap syrah or Joseph Phelps Le Mistral.
*Chilean Seabass $26 Pan roasted over a bed of braised leeks w/ pureed potato & an heirloom tomato-tangerine-habanero sorbet. This fish melts in your mouth. Pairs excellent w/ the Eroica Reisling.
*Curry Lamb $27 Colorado lamb loin roasted med-rare. Served over a bed of crispy-shiitake rice & marinated onion w/ cilantro & a Japanese style curry sauce. Excellent w/ the Stag’s Leap syrah or the Groth cabernet.
*Filet Mignon $29 Our famous USDA Prime filet cooked med-rare & glazed w/ a brandy-merlot reduction. Served w/ roasted garlic potatoes w/ shitake mushrooms. The best steak in Valencia! Estancia pinot or Wolf Blass shiraz-cabernet.
